Team building in the Hunter works best as a day with two halves: something hands-on in the morning that mixes people who rarely sit together, then a long lunch or dinner at a winery where the conversation carries on. Most of the options sit within Pokolbin, so a coach or a few cars can move the group between them without losing the afternoon.
The activity is where teams differ. Office groups that want to talk while they work tend to choose Our Italian Table, where up to 20 guests roll pasta at Nicita Estate and the school is theirs exclusively once 12 places are booked. Majors Lane Cooking School in Lovedale suits teams of 6 to 18, cooking barbecue, Thai or Greek in a covered courtyard. Hunter Valley Resort + Farm adds candy and pizza workshops, and Hollybrook Hunter Valley runs Art N Sip painting. Competitive teams lean towards Hunter Adventure Centre on Hermitage Road, which pairs an eight-lane axe range with archery, laser clay shooting and guided Segway rides. Mixed-ability groups often find East Maitland Bowling Club the easiest fit, with free barefoot bowls and coaching for beginners by appointment, and Club Singleton has bowling greens of its own beside an auditorium for up to 180. Teams staying at a resort can have the activity come to them: Pinnacle Team Events runs Grape to Glass blending, Wine Olympics and Survivor days on site, from $50 per person, and Premier Team Building shapes anything from a 60-minute session to a multi-day retreat around your brief.
Choosing an activity for a mixed team:
Ask each venue about weekday dates when you enquire, since a midweek booking keeps the working week intact. For conference-style days see corporate event options, or browse every cooking class in the valley.

Hunter Adventure Centre runs axe throwing, archery, laser clay shooting and Segway tours, Hunter Valley Horses runs private trail rides, and Our Italian Table runs hands-on pasta classes at Nicita Estate.
Our Italian Table runs private and team classes for up to 20 guests, and the school becomes exclusive to your group once 12 places are booked. Majors Lane Cooking School in Lovedale runs private sessions for 6 to 18, from $170 per person: around three hours of cooking, then lunch together with a drink included.
Ben Ean's Laraghy Room seats up to 110 with a private balcony, and Brokenwood Wines has private dining rooms over its barrel hall. Krinklewood Estate in Broke handles groups of 10 to 250.
Greystone Estate is hired exclusively, with 15 king suites sleeping 32 and an in-house chef, so the whole programme can run on one private property. If the team books its own property, Billy Goat Catering cooks on location from $56 per person, and RSA-trained bar staff are available.
Barefoot bowls at East Maitland Bowling Club, cooking classes at Our Italian Table, candy and pizza workshops at Hunter Valley Resort + Farm and Art N Sip painting at Hollybrook Hunter Valley, from $88 per person, ask little physically. A guided trail ride with Hunter Valley Horses is aimed at beginners as well as experienced riders. Club Singleton adds barefoot bowls on its greens, with canapés from $20 per person afterwards, and Leaves & Fishes in Lovedale suits a slower day among lotus ponds and overwater boathouses.
Pinnacle Team Events is fully mobile, bringing facilitators, a PA and props to your resort, winery or conference room for groups from about ten to more than a thousand. Premier Team Building also tailors programs to a brief and sends a free team health-check report afterwards.
