Wollongong's drinks experiences are run by the people making the product, and the three here sit in three different parts of the Illawarra – Bulli in the north, Mount Saint Thomas near the city, and Gerringong on the Kiama coast.
Resin Brewing works out of the restored 1887 Bulli Railway Guest House beside Bulli Station. Its guided tours are led by the brewer and finish with a tasting paddle of four house beers, for groups of four or more, from $35 per person. There's room for up to 200 guests across indoor areas, the heritage house and covered outdoor space, so a tour can roll into a much bigger gathering.
South Coast Distillery in Mount Saint Thomas leans into spirits. Its gin-making workshops have you design a recipe with a distiller and leave with 700mL of your own gin, and it also runs cocktail classes and guided Australian whisky tastings. Experiences start from $99 per person.
Stoic Brewing in Gerringong is family run, and you drink among the brewing vats. Group functions can add a brewery tour, a guided beer tasting, private paint and sip or trivia, using the courtyard, the upstairs mezzanine or the whole brewery with no venue hire fee.
