About Immerse Winery
Immerse is a family-run winery on 49 acres at Dixons Creek, on the Melba Highway, with vineyards, rose gardens, an ornamental lake and a restaurant. The Myles family runs it, and weddings are its main focus. There are four ceremony locations. The Vineyard Chapel has tall windows facing the vines, the open-air Garden Chapel sits by the lake among more than 2,000 rose bushes, and The Paddock and The Fountain offer open lawn settings. Both chapels seat about 80 on benches with plenty of standing room, while The Paddock and The Fountain have chairs for 40. The reception space holds up to 220 guests with a dance floor, and it is wheelchair accessible with ramps on two sides and an accessible restroom. Packages include 30 minutes of canapés and a choice of alternate-drop, shared feast or cocktail-style dining, finishing with two roving desserts. A five-hour drinks package of Immerse sparkling and wines, beer, soft drinks, tea and coffee runs through a reception of five and a half hours. Once the ceremony begins, the property is yours alone for the night. A wedding coordinator handles the ceremony and set-up, then hands over to a supervisor who stays through the reception, which finishes at 11pm unless extended. Packages cater for 55 to 220 guests. Add-ons include a reserve beverage package for $12 per person, extra canapés for $12 per person, grazing tables from $1,250 and an upgrade to a seated dessert for $20 per person.
Food
Dietary requirements are catered for at no extra cost when advised four weeks ahead, and couples get a menu tasting for two about two months before the day. The wedding cake is cut and served on platters with tea and coffee.

BYO alcohol is not permitted under the liquor licence, but a spirits bar tab can be arranged.

How many guests can Immerse host?
Packages suit 55 to 220 guests, and the reception space fits 220 with a dance floor. The two chapels seat about 80 on benches.
Will another event be on at the same time?
No. The venue may run weekend lunches or daytime functions, but from the start of your ceremony the property is reserved for your wedding.
What time does the reception finish?
The standard package ends at 11pm, and you can extend by 30 minutes or an hour at extra cost, drinks included. The bar closes 30 minutes before the finish.
Can our dog be part of the wedding?
Yes. Dogs on leads can join you in the gardens and ceremony spaces, but not in the reception space or accommodation. A pet sitter needs to take them home once dinner service starts.
How do we secure a date?
A date can be held for seven days with no obligation. To confirm it, a $5,000 non-refundable booking fee and signed terms are due within 72 hours, and the final invoice is due three weeks before the wedding.
