About Pass the Parmesan Italian Cooking School
Pass the Parmesan Italian Cooking School is run by Chef Antonella, who grew up in an Italian migrant family on acreage in Western Sydney, writing down her mother's recipes as a child. She spent years in food marketing before qualifying as a chef at Le Cordon Bleu, has taught Italian cooking for more than 12 years and runs her own school in Ryde, close to Midway Shopping Centre. Classes are hands-on and kept small, so everyone gets personal attention. Menus change through the calendar and include fresh pasta with two sauces, potato gnocchi with a slow-cooked ragu, a Roman pizza night with calzone and salad, Tuscan dishes such as ricotta and spinach gnudi, focaccia with grilled antipasto vegetables, a gluten-free pasta class and Italian biscuit making. Most classes run for about three and a half hours, with Italian music playing and a few Italian phrases picked up along the way, and they finish with everyone seated together to eat what they have made. Groups can book a private class for a birthday, hens party, social club outing or a night with friends, choosing the menu and holding it at the school or at another location. Corporate team building classes take up to 12 people, add team activities for a bit of competitive fun and have menus customised for the group. For anyone who cannot make it in person, six self-paced online modules cover everything from antipasto to dolce, and gift vouchers can be put towards any class.
