In Cucina Cooking Academy is an Italian cooking school on Gow Street in Padstow, in a recently renovated event space and kitchen. It has been teaching for around ten years, and its speciality is cooking in wood-fired ovens. Classes cover pizza, sourdough and other breads, meat and seafood, and have grown to include pasta, gnocchi, risotto and pastry. The emphasis is on home-style dishes you can make again in your own kitchen. The public pizza class is the easiest way in. It runs for about three hours with an internationally accredited pizza chef, takes between six and ten people, and costs $150 per person including ingredients, food and wine, a laminated dough recipe and dough balls to take home. A wood-fired meat and seafood class is listed at $180 per person, and a six-hour professional masterclass for aspiring pizza makers costs $1,200 for one to six people. For celebrations and team days, In Cucina runs private classes of about three hours, including the meal at the end. You can stick to one of the standard menus, combine a few, or have one written for your group, and everyone gets a laminated copy of the recipes. Birthdays, hens and bucks groups, anniversaries and work teams are all catered for, with a small surprise added for birthdays. Private sessions run Monday to Friday, mornings or afternoons, and it's best to enquire eight to ten weeks ahead. Public classes are for over-16s.
