About Bondi Liquor Co
Bondi Liquor Co started in Bondi and later moved its stills to McLachlan Avenue in Darlinghurst, where it makes gin, vodka and fruit cellos by hand in small batches. Founder Adrian, a hospitality lifer who came to Bondi for the surf, runs the business, while head distiller Connor develops the recipes. The building takes in the distillery, a tasting room and bar, an open-air patio and a daytime coffee counter called STILL. The gin making class lasts an hour and a half. It opens with a behind-the-scenes look at the distillery and how each botanical shapes the spirit, then guests smell and taste their way through a spread of botanicals. Everyone works through three recipe trials, adjusting the balance each time, before bottling and labelling their final blend in a 200ml bottle to take home. Light nibbles are served along the way, and no gin knowledge is needed. Public classes take 1 to 12 people, and private classes can be arranged for 4 to 30, which suits date nights, celebrations and team events. The tasting room and bar suits drinks before or after the class, and it can be booked for private functions, semi-private gatherings and large groups. For functions, guests choose five share dishes from the chef's list, such as sliders, arancini and tuna tostadas, with a grazing platter as an extra, then either set a budget for a curated open tab or let guests pay as they go. A deposit secures the date, and exclusive hire is available with a minimum spend.
