Sebastian sits on the Esplanade in Williamstown, inside a heritage-listed former bathing pavilion that looks straight out over the beach and the bay. The kitchen takes its cue from San Sebastian in Spain's Basque Country, so meat, seafood and vegetables are cooked over open flame on a custom charcoal grill, with a long list of local and European wines alongside. The venue is split into several bookable areas. The Rear Dining Room is the main event space: it seats up to 70 at long tables or holds 130 standing, and has its own bar, private bathrooms, built-in AV, a separate entrance and access to the deck. The Corner Deck adds room for 30 to 50 standing in the warmer months, and the Lower Corner Deck below suits 15 to 30 for a casual gathering with direct access to the sand. A Private Dining Room seats up to 14 for set-menu dinners, and the whole venue can be hired for 215 seated or 420 standing. Sit-down events in the Rear Dining Room use the restaurant's shared set menus at $95 or $115 per person, while cocktail events run on canapé packages from $54 per person. Grazing boards suit the Lower Corner Deck. Drinks run as a three-, four- or five-hour package or a pre-selected tab with roaming table service. A minimum spend of $120 per person applies to most event bookings, a 5% service fee goes to staff, and day events run 1pm to 5pm with evening events 7pm to 11pm.
