About South Coast Distillery
South Coast Distillery is a small craft distillery in Mount Saint Thomas making gin, vodka, liqueurs and whisky with ingredients drawn from the Illawarra and the coast. Its range takes in a contemporary gin with lemon myrtle and cardamom, a navy-strength gin, an Illawarra plum gin in a sloe style and an Old Tom infused with oolong tea. The cellar door and bar sit beside the stills and barrels, with a small botanical garden out the back. Three hosted experiences can be booked online. The gin-making workshop runs for about four hours: a tour of the distillery, a tasting of the gin range, a walk through the garden to learn about edible native plants, then a session with a distiller to design your recipe before it is distilled in a glass still. Lunch matched to gin and tonics is served while it runs, and everyone leaves with a labelled 700mL bottle. The 90-minute cocktail class takes up to 12 people, starts with a drink and nibbles, and covers three signature cocktails plus the basics of creating your own. The whisky tasting walks through how whisky is made and pours five nips of Australian craft whisky with palate-cleansing snacks. Regular dates usually fall on Saturday afternoons, and private sessions can be arranged on Fridays by emailing the events team. The bar can also be hired for birthdays, hens and work events with no room fee, only a minimum spend over the bar that depends on the day and group size. Functions are self-catered, so bring your own food or caterer, along with decorations and a playlist.

Frequently asked questions
What happens at the gin-making workshop?
After a distillery tour, a gin tasting and a walk through the botanical garden, you work with a distiller to choose botanicals and amounts, watch your gin distil, enjoy lunch and take home a labelled 700mL bottle.
How much do the experiences cost?
The cocktail class and the Australian whisky tasting are each $99 a person. The gin-making workshop is priced per still at $250, with up to seven stills per workshop.
How many people can join a cocktail class?
Public classes take a maximum of 12 people. Larger private classes can be arranged by emailing the events team with your preferred date and group size.
What is the cancellation policy for gin workshops?
Cancel 14 days or more before the workshop for a full refund. Cancellations after that receive a 50% refund, and early notice helps the team refill the still.
Can we hire the distillery for a party?
Yes. There is no venue hire fee or deposit, just a minimum bar spend that varies with the day and group size. Functions are self-catered, and you can bring decorations and your own playlist.
