About Nuance Food
Nuance Food is a Vietnamese caterer run by founder Theresa Nguyen from a kitchen in Castle Hill. It grew out of cooking phở for friends in London before the business came home to Sydney, and the menus still lean on whole ingredients and traditional Vietnamese technique. Expect fresh gỏi cuốn rice paper rolls, lacy netted spring rolls, crispy golden money bags, steamed bao with crispy chicken or BBQ pork, char-grilled skewers and a slow-roasted five-spice crispy pork that has become the kitchen's signature, alongside salads, noodles and fried rice. For cocktail parties and receptions there is a canapé range running from snow crab and mango prawn bites to salmon tartlets, Angus beef sliders, roast duck tartlets and soft shell crab bao, finished with coconut mango panna cotta. Larger groups can choose a shared buffet, a live station, a grazing spread laid along one long table, or a sit-down dinner. Private work covers milestone birthdays, engagement parties, cultural ceremonies and small dinners at home, and the team also caters weddings and corporate functions from team lunches to conferences. Service is flexible. Orders can be collected from the kitchen, delivered ready to serve, or run as a full event with food stylists, display platters, fresh flowers, wait staff and pack-down, so the host is never left with the washing up. Dishes are marked for vegan, vegetarian, halal, gluten-free, dairy-free and nut-free needs, and the team adapts to the rules of each venue, with regular work at places like Greenhouse Sydney, UTS and the Royal Botanic Garden. Every quote is built around the guest count, the venue and the style of service.
