About Cheesy Duz It
Cheesy Duz It is a Marrickville pizza caterer that tows a commercial wood-fired oven to your party and cooks everything on the spot. The dough is the point of difference: only Tipo 00 flour, water, salt and fresh yeast, which is left to ferment for 48 hours and then stretched by hand at the event, never frozen or par-baked. Toppings lean on fior di latte mozzarella made with vegetarian rennet, imported San Marzano tomatoes and market-fresh produce. The Italian-built oven burns hardwood and gas at around 400 degrees, cooks up to seven pizzas at once in about 90 seconds, and a second oven can join bigger bookings. Four packages cover entrée, main and dessert pizzas, while salads, pasta, canapés and wait staff can be added. Pizzas arrive on wooden paddles, and printed menus on clipboards, eco-friendly plates and napkins come at no extra charge, with leftovers boxed up at the end. Children under five eat free and those aged five to ten are half price. The trailer is fully self-sufficient and needs about a 3 by 6 metre space plus a marquee for prep, with wide side access if it's going into a backyard. For balconies, courtyards, offices and exhibition halls there are portable gas ovens and an indoor electric setup, and on total fire ban days the main oven runs on gas alone. The business is owner-operated and takes a single event each day, catering birthdays, engagements, Christmas parties, office functions, school events and weddings.
