About CHAPA

CHAPA is a boutique catering company based at 163 Enmore Road in Enmore, started in 2015 by Florencia Vazquez and Clayton Debattista and still family run. Clayton is executive chef and Florencia manages the events, and the kitchen is built around fire, which is where the South American side of the business comes from. They cater corporate events, weddings and private parties, working in offices, hired venues and people's homes, and they hold a Gold Licence caterers accreditation. Menus are seasonal and written per event, and there are nine of them to start from. Canapes and Bigger Bites runs through vegetarian, seafood, poultry and meat bites up to small bowls of gnocchi, chowder and curry. There are separate menus for buffets, banquets of shared plates over two or three courses, formal lunch and dinner, corporate catering, family-style meals for the office, cakes, and a grazing and food station menu that includes a raw seafood bar, a taco station, a paella pan, an Asian bar, pizza napoletana and a whole Italian porchetta carved to order. The wood-fired barbecue menu covers the parrilla, the dome and the asador pit, including whole Berkshire pig and whole lamb over coals. Staff and equipment are quoted separately, and chef charges vary with guest numbers. Prices exclude GST and there is a minimum spend of $1,000 plus GST on any event. Beyond the food, they hire out Argentinian grills, chulengo grills, hibachis, Gozney pizza ovens, paella pans and full outdoor kitchen setups, and they provide wait staff and bar service.

CHAPA does not publish per-head prices. The menus state that prices exclude GST, that chef charges apply and may vary depending on the number of guests, and that there is a minimum spend of $1,000 plus GST. On the wood-fired barbecue menu, staff and equipment hire are charged separately from the food. Catering equipment can also be hired on its own, including Argentinian parrillas, chulengo grills, hibachi grills, Gozney pizza ovens, trestle tables, paella pans and stands, charcoal and firewood, and a full outdoor kitchen setup. Service Details

Menus are seasonal and written for each event rather than picked off a fixed list, and each of the nine published menus can be downloaded from the site. Canapes and Bigger Bites is split into vegetarian, seafood, poultry, meat, bigger bites, bowls and sweet canapes. The buffet menu is ordered as five, six or seven items and comes with artisan sourdough and cultured butter. Banquets are shared plates over two or three courses. The grazing and food station menu covers a grazing table of cured meats and cheeses, a raw seafood bar, a shakshuka breakfast station, paella, tacos, an Asian bar, fish and chips, cheeseburgers, a Deep South station, pizza napoletana, whole porchetta and a glazed leg ham; on grazing tables for events under 30 guests the flat bread is swapped for artisan sourdough. The wood-fired barbecue menu runs the parrilla, the dome and the asador pit of fire, taking in whole Berkshire pig, whole lamb and a whole beef rib rack. Can they cater for dietary requirements?

Yes. Every menu marks dishes as vegetarian, vegan, gluten free and dairy free, and there are full vegetarian sections rather than a single token option, including smoked eggplant with feta and pomegranate, Korean vegetable pancakes, Israeli chickpea falafel and cheese and corn empanadas. The corporate catering side specifically notes that understanding dietary requirements is part of how they run an event.
