About FoodbyWayne

FoodbyWayne is a Sydney catering business working out of a central kitchen in Taren Point, and it leans hard on food cooked live at the party. The paella menu is made in a giant pan in full view, with a chicken and seafood version loaded with chorizo, mussels, calamari and prawns, or a vegetable one with pumpkin, mushroom, zucchini and eggplant. Spit roasts cover whole pig with crackling, baron of lamb and prime beef ribs with a red wine glaze, carved from the spit and served with tabouli, Caesar salad, roasted sweet potato and crusty rolls. For a stand-up crowd, the charcoal menu grills king prawns, lamb cutlets, lamb souvlaki, tandoori chicken, haloumi skewers and South American beef kebabs over a brazier, served as finger food over about two and a half hours. Paella and spit roast packages can also open with trays of oysters, rice paper rolls, scallops, satay and seafood rissoles before the main event. Themed nights are a speciality, such as a German menu of sauerkraut, roast potatoes, gravy and pretzels. The wedding finger food menu runs to 16 items over four hours, from Peking duck pancakes to wagyu sliders. Hosts who want to self-cater can order platter boxes for pickup or delivery: grazing boxes of cheese and fruit, antipasto, sandwiches and wraps, desserts or a kids box, and canape boxes of 30 pieces. The kitchen offers vegan, gluten-free and kid-friendly options and will build a custom menu on request. FoodbyWayne caters weddings, corporate functions, family celebrations and wakes, for groups as small as 10 or as large as several thousand, with past events at the Royal Botanic Gardens, Shark Island and Fort Denison.
