Blue Phoenix Asian Catering Group cooks Vietnamese and Chinese food for Sydney celebrations from a commercial kitchen in Villawood. The team is the preferred Asian caterer at Doltone House's Club Marconi, Le Montage from the Navarra Group and Clarence House, and also lists Water View at Olympic Park, Skyview in Liverpool and Ottimo House among its venues, along with private homes and function rooms. Weddings are a big part of the work, but plenty of bookings are small private parties, family celebrations and business functions. The event-styled celebration packages are the simplest way to feed a crowd. The Family Celebration package starts at $60 a head for at least 30 guests and brings two fried items, a steamed dumpling, a cold dish such as rice paper rolls, three main dishes and either a fruit tray or cream puffs. Classic, Signature and Grand packages step up to $75, $85 and $110 a head for 50 or more guests, adding extra mains, chef's specials and, at the top level, steamed oysters on vermicelli. Package prices cover GST, food styling, table decoration, plates and cutlery, and collection of equipment afterwards. For a seated meal, private banquet menus work through dishes like prawn and jellyfish salad, fried quail, oysters with ginger and shallot, crispy skin chicken and whole steamed fish, and a vegetarian banquet is offered too. Buffets pair spring rolls, prawn toast and dumplings with stir-fries, black pepper beef, noodles and fried rice. Smaller groups can order trays instead: finger food, steamed dim sum, bao buns, mini banh mi, rice paper rolls and Thai and Vietnamese salads. There is also a dessert table of cupcakes, panna cotta and pandan puddings, and a table of Vietnamese dumplings such as banh beo and banh bot loc.
