About Carolina Smoke
Carolina Smoke is a family owned and operated barbecue caterer working across Sydney. Nick, the founder and pitmaster, grew up in Fayetteville, North Carolina, where a family gathering usually meant a whole hog on the go, and he moved into catering here after seeing how much interest there was in American low and slow cooking. He has been feeding Sydney for three years and has served more than 10,000 people. The cooking is done on a 1,000 litre custom offset trailer smoker that holds fourteen full packer briskets across three racks, and on an 1,100 gallon offset smoker built for gatherings of up to 1,500 people. There are three packages and all of them are built on 400g of meat per guest, half brisket and half pulled pork or pulled lamb. The Feed is $50 a head with two sides, bread rolls and pickles. The Feast is $65 and adds 8kg of chicken wings or 4kg of pork belly bites and a third side. The Banquet is $90 and adds more wings or pork belly bites, eight racks of pork spare ribs, southern sweet iced tea and fresh banana pudding. All three need a minimum of 30 people, and there is a minimum order spend of $1,800. Sides include Carolina creamy coleslaw, dirty rice, mac and cheese, potato salad, corn on the cob, smoked butternut squash and smoked eggplant parmigiana. Three levels of service are offered. They can cook and deliver the food hot for you to unwrap and serve, bring it to your venue and set up a country-style buffet with bain maries and simple decor for a $300 fee, or bring the smoker itself and keep it running through a three hour grazing service for $600. What comes with each package?
Every package includes 400g of meat per guest, made up of 200g of brisket and 200g of pulled pork or pulled lamb, along with bread rolls and pickles. The Feed adds two sides of your choice, the Feast adds a third side plus 8kg of chicken wings or 4kg of pork belly bites, and the Banquet adds more wings or pork belly bites again, eight racks of pork spare ribs, southern sweet iced tea and fresh banana pudding. A la carte items can be added to any package but cannot be ordered on their own.
What does it cost?
The Feed is $50 per person, The Feast is $65 per person and The Banquet is $90 per person, each with a minimum of 30 guests. There is a minimum order spend of $1,800, and all packages include a $50 burning materials fee. Setting up a buffet at your venue adds a $300 service fee, and bringing the smoker on site for a three hour grazing service adds $600. Bookings made more than six months ahead may attract a 10 per cent surcharge because of rising meat prices.
How far ahead should we book, and how do payments work?
A 50 per cent deposit secures the order and nothing is confirmed until it is received. Final numbers and dietary requirements must be confirmed no later than seven days before the date, the balance is invoiced five working days out, and full payment is due before or on the day of delivery. Cancelling within seven days forfeits the whole deposit, 8 to 14 days forfeits half, 15 to 30 days forfeits a quarter, and more than 31 days notice is refunded in full.
How does the food get to us?
There are three options. Just Deliver It means they cook the food and deliver it hot to your door for you to unwrap and serve, with delivery costs varying by location. Deliver and Serve means they bring the food to your venue and set it out as a relaxed country-style buffet with bain maries and simple decor, plus aluminium trays for leftovers, for an extra $300. The Whole Hog brings the smoker to your event and keeps it running through a three hour grazing service, for an extra $600, where the venue allows it.
Can they cater for dietary requirements?
Halal-certified meats are available on request. There are two vegetarian sides, smoked butternut squash with roasted walnuts, feta and a balsamic glaze, and smoked eggplant parmigiana, both by the tray. Food is prepared to Food Standards Australia requirements, but the kitchen handles nuts, egg, dairy and gluten, so they cannot guarantee against traces and ask that guests with serious allergies are told. Dietary requirements need to be confirmed at least seven days before the event.
