About Brunswick Kitchen
Brunswick Kitchen is a small cooking school at 1/288 Albert Street, Brunswick, run by classically trained chef Tracey Lister. After years at senior level in Melbourne restaurants, Tracey moved to Hanoi, helped set up the KOTO hospitality training charity for street kids and opened a cooking centre there, and she has co-written several Vietnamese cookbooks. Back in Brunswick, her schedule leans on her own specialties: dishes from Hanoi and central Vietnam, vegan Vietnamese cooking and South-East Asian salads, taught around a long communal table. Guest chefs widen the range. Former MasterChef contestant Pia Gava teaches northern Italian filled pastas, Lady Galvis and Daniela Ojeda run a Colombian class with arepas and empanadas, and other sessions cover Portuguese seafood, Mexican tacos, gnocchi and fish dishes inspired by Ottolenghi. Classes are mostly demonstration, but you'll be asked to pitch in along the way, and everything prepared is served to the group with a glass of wine. Aprons are supplied, so you only need to bring an appetite. For groups, Tracey can build a private class around a menu or theme you choose, which suits birthdays and get-togethers with friends. Team building workshops have staff working in pairs or small teams to produce a shared meal, for a minimum of ten guests, and larger groups can be hosted at alternative venues for an extra cost. The kitchen itself is available to hire by the half or whole day for launches, workshops, photo shoots or private dinners. Kids' classes run on some dates, and gift vouchers are valid for 12 months.

Frequently asked questions
How much is a cooking class at Brunswick Kitchen?
Public adult classes are priced per person, generally between $145 and $155 for a class of about two and a half hours. Kids' classes cost less, for example $75 for a two-hour fresh pasta and ice-cream class.
Are the classes hands-on?
They're mainly demonstration: the chef walks through each dish and the techniques behind it, but guests are expected to roll up their sleeves and help as the menu comes together. Everything made is served to the whole class.
Can we book a private class for our group?
Yes. Tracey can tailor a private class to your group's tastes and timeframe, with you choosing the menu or theme. Team building classes need at least ten guests, and the whole kitchen is available to hire by the half or whole day.
What do I need to bring?
Nothing but an appetite. Wear something comfortable, as Brunswick Kitchen provides aprons. Only booked guests can attend, so friends can't come along just to watch or take photos.
What if I can't make my class?
Classes and vouchers aren't refundable, but someone else can go in your place. Give at least two weeks of notice and you can move your booking to another class.
