About Archie Rose Distilling Co.
Archie Rose Distilling Co. has been making whisky, gin, vodka and rum in Sydney for over a decade, and its Rosebery site on Mentmore Avenue doubles as a bar, cellar door and home for a programme of hands-on spirits experiences. Classes take place in the Still Room, part of the original distillery, so guests learn about distilling with the equipment close at hand. The headline sessions are the blending classes. In the gin version, a host walks the group through how botanicals are distilled and balanced, then each guest builds a gin from a set of individual distillates and hand-fills two 200ml bottles to take home. The whisky version follows the same pattern using single malt components, so guests can steer towards smoky, fruity or malty styles. Each runs for about an hour and a half and includes a drink on arrival. For something shorter, there is an hour-long distillery tour finishing with a tasting, guided flights of five gins or five whiskies, and a cocktail masterclass covering three classics. For birthdays, hens and bucks celebrations, Christmas parties or team days, the venues team arranges private versions of these experiences, and the events planners can put together larger cocktail and spirits parties in the bar. Tours suit groups of up to 25, and the blending and cocktail classes take up to 30. The liquor licence means every guest must be 18 or over, with no exceptions for accompanied minors. Bookings cannot be refunded, though they can be moved to another date with at least six hours' notice.

Frequently asked questions
How many people can join a class at Archie Rose?
The gin and whisky blending classes and the cocktail masterclass take up to 30 guests, the distillery tour takes 25, and the guided gin and whisky tastings take 20. Groups of ten or more can ask the venues team for a private session.
What does the gin blending class include?
About 90 minutes with a host, a drink when you arrive, a run-through of how botanicals are distilled, and the chance to build your own gin from separate distillates. You then bottle and label two 200ml bottles of it to take away.
How much do the experiences cost?
The tour and tasting starts at $29 per person. Guided gin tastings are $79, whisky tastings $89, the cocktail masterclass $99, gin blending $119 and whisky blending $129 per person.
Can under-18s come along?
No. The liquor licence does not allow anyone under 18 to attend, even with a parent or guardian, so every guest in the group must be an adult.
Can we change our booking date?
Experiences are non-refundable, but you can reschedule online or by request as long as you do it at least six hours before your session starts.

Travis and the team are legends. It’s rare in Sydney you feel genuinely welcomed by every member of staff. While we came in for a glass of wine (sinful in a distillery) the staff were tentative listening to our tastes an…
