About JimmyRum Distillery
JimmyRum Distillery is a craft rum maker in Dromana where the bar and tasting bench sit inside the working distillery. Matilda, a 1,500-litre copper still, stands only metres from the tables, and the rum garden outside welcomes dogs too. For hens and birthday groups, the cocktail workshop teaches shaking and mixing with the house spirits. It takes groups of six to twelve and costs $80 per person for two cocktails or $95 for three. Groups of eight or more can also arrange the distilling experience on a date that suits them. Spirit lovers can book the tasting bench for a guided run through the core range plus a few rums that will never be bottled for sale. The three-hour distilling experience goes behind the scenes with founder James McPherson, with tastings from around the world and a 50ml blend of your own to take home. Spice it Your Way is a two-hour masterclass where you choose from more than 20 spices to build your own spiced rum. Afterwards, settle in for share plates, cocktails, local beer and wine in the bar or out in the garden.

How many people can join a cocktail workshop?

What is included in the distilling experience?
It runs for three hours, starting with coffee or tea, then rum history, tastings of four JimmyRum spirits and rums from elsewhere, and a tour of the distillery. Each guest blends a 50ml bottle to take home, and groups can combine their blends into one larger bottle.
When is the distillery and bar open?
It trades Tuesday to Sunday and is closed on Mondays, with tasting bench sessions on the hour. Saturday service runs into the evening and Sunday afternoons bring live music, so booking ahead is a good idea.
