About Chief's Son Distillery

Chief's Son Distillery is a family-owned whisky maker in Somerville producing 100% Australian single malt from malted barley. It works in small batches on a fully manual system, maturing the spirit in casks that once held tawny, Apera, red wine and bourbon. The Distillery Tour is led by the head distiller and runs for 1 hour 40 minutes. It follows the whisky from malt to maturation with a walk through the barrel warehouse, then four single malts to taste and a 100ml bottle you fill yourself straight from a cask. The head distiller pitches each tasting to how much your group already knows about whisky. Booking the tour with cheese adds a curated cheeseboard for $89 per person, against $75 for the standard tour. Tours take two to twelve guests at 11am on selected Fridays and Saturdays, and other days or times can be requested by enquiry. If time is short, the tasting room pours guided flights of four whiskies at $10, $15 or $20 per person depending on the range. Bookings take priority over walk-ins. Tasting experiences for corporate and private events are arranged on enquiry.

Ordering from Chief’s Son was effortless, and my delivery arrived quickly in packaging so well-presented it was almost display‑worthy — though it certainly didn’t stay unopened for long. The Tawny was sweet, delightful,…
