About Amber Lane Distillery
Amber Lane Distillery makes Australian single malt whisky on Yarramalong Road in Wyong Creek, using large barrels, long maturation and techniques drawn from French wine and cognac making. The working distillery houses a 3,600-litre copper pot still and racks of ageing barrels, and the team welcomes groups who want to see how it all works and taste the results. Private tastings can be booked at the distillery for whisky clubs, friends, workmates, birthdays and hens and bucks celebrations. The Introduction to Whisky tasting runs for 90 minutes and suits newcomers, showing how barrel type, age and strength change the flavour across five whiskies, at $49.50 a head with a minimum booking of $440. The Whisky Blending Masterclass goes deeper, starting with new make spirit straight off the still and the double pour comparison technique, then letting each guest blend samples drawn from individual casks into a 50ml whisky to take home, at $93.50 a head with a minimum of $660. A cheese and fruit platter can be added at the distillery for $19.25 a head. Monthly open days offer another way in, with a tour and tasting of four whiskies in the early afternoon and a later session that adds the blending class. For groups that can't make it out to the valley, the team also runs tastings at homes and clubs under a roving catering licence, with a travel fee applied. Alcohol isn't sold or supplied to anyone under 18, so all tastings are for adults.
