Polly Bar has been pouring cocktails on Brunswick Street in Fitzroy for more than two decades, in a room styled on a plush 1920s Paris bar – red velvet armchairs, marble coffee tables and even a couple of thrones. Alongside its table-service bar it runs a private cocktail-making class built for groups. Each class lasts two hours: guests are handed a drink on arrival, nibble on shared grazing platters, and a bartender walks them through the techniques and recipes before everyone makes and drinks three cocktails – usually a Southside, the house Aussie Punch and an espresso martini, with swaps on request. The class is private to your group. Smaller groups are hosted in a reserved corner of the main bar away from other guests, while groups over 14 can take the upstairs function room, where bookers have added entertainment such as a drag queen. A mocktail version uses non-alcoholic spirits at the same price, and under-18s can join that version with a parent or guardian present. Classes have ranged from couples to 70 guests. Polly also hosts a cocktail high tea with sparkling on arrival and tiered stands of sandwiches, cakes and fruit, a whisky flight with an old fashioned, a Mad Men cocktail class and an absinthe tasting served the traditional way with iced water and sugar. For larger parties there is an Exclusive Side Bar for 20–35 guests and the upstairs room with exposed brick for 30–65, with catering or pizzas available and drinks packages for bucks nights.
