About Manly Spirits Co
Manly Spirits Co makes gin, vodka, liqueurs and single malt whisky at its distillery in the Winbourne Industrial Estate in Brookvale, and opens the production floor up for hands-on classes. Its Australian Dry Gin blends sustainably foraged marine and Australian native botanicals, and those same spirits are the base for everything taught in the classes. On site there is also Lilly's Bar and a cellar door, so the class can roll straight into drinks afterwards. The Cocktail Masterclass is led by a professional mixologist, who takes the group through a short history of cocktails, how to use the equipment and how to shake, stir and strain three signature drinks inspired by native botanicals. A cheese and antipasto board is shared during the class. The public class runs on Friday nights, and private masterclasses for 10 to 25 people can be booked for a date and time that suits, including a G&T on arrival. Gin School is held in The Stillhouse, where each guest runs a mini copper pot still, chooses botanicals and works with a distiller on the cuts to produce a 700ml bottle of their own gin, then labels and seals it to take home. Gin School takes up to 16 guests, with cheaper per-person rates for groups of four or more. Private gin and whisky distillery tours with tastings are offered for 15 to 30 people. Classes suit hens and bucks groups, birthdays and work outings. Everyone who books a distillery experience gets $10 off a full-sized bottle from the cellar door. For bigger celebrations, the Barrel Room and the full indoor venue can be hired, with minimum spends set by the venue manager.

How much is the cocktail masterclass?
The public Cocktail Masterclass is $95 per person plus a booking fee. Private class pricing is arranged with the venue manager on (02) 8018 5144.
Can we book a private class for our group?
Yes. Private cocktail masterclasses are available for groups of 10 to 25 and are held at a time and date arranged with the venue. They include a G&T on arrival, three signature cocktails and an antipasto and cheese platter.
How does Gin School work and what does it cost?
Each guest uses a mini copper pot still to distil a 700ml bottle of gin from botanicals they choose, guided by a distiller, and takes the bottle home. It is $190 per person, dropping to $150 per person for groups of four or five and $130 per person for groups of six or more, with a maximum of 16 guests.
Is food included?
The Cocktail Masterclass includes a shared cheese and antipasto board, and Gin School includes a cocktail and antipasto plate along with a G&T on arrival.
How long do the classes run?
The Friday Cocktail Masterclass runs from 7pm to 8:30pm, private masterclasses run for up to two hours, and Gin School takes around two to two and a half hours.
