About Republic of Fremantle Distillery
Republic of Fremantle is an urban distillery on Pakenham Street in Fremantle's historic West End. It makes vodka and gin from grapes grown in Western Australia, and its custom copper stills sit in full view of the bars, so every experience happens right beside the production floor. The signature experience is Gin School, a two-hour class held on the mezzanine overlooking the stills. Guests are handed a gin and tonic, hear a short history of distilling, then each design a recipe and run it through a mini pot still to fill a 500ml bottle to take home. More than 10,000 people have been through the class. Cocktail School runs for 90 minutes with one of the venue's bartenders and covers house-made ingredients, batching for a dinner party and four cocktails to taste. The shorter tour and tasting takes 45 minutes and ends with a vodka soda or gin and tonic at the bar. Experiences run on set weekend and Friday sessions, and groups of more than ten can ask for a private session. Da Napoli serves pizza and pasta inside the building, and larger events can use the Distillery Hall, the Mezzanine, the Parklet or the whole venue.

Frequently asked questions
What happens at Gin School?
Over two hours you get a gin and tonic on arrival, a short lesson on distilling, and time at a mini copper pot still to create and distil your own recipe. Everyone leaves with a 500ml bottle of the gin they made.
Can our group book a private experience?
Yes. Groups of more than ten people can arrange a private Gin School or other experience on request, and smaller groups simply book places in the scheduled sessions.
When do the classes run?
Gin School runs Saturday at 12pm and 4pm and Sunday at 1pm. Cocktail School runs Friday at 5pm and Saturday and Sunday at 2pm, and lasts about 90 minutes.
Can we eat at the distillery after a class?
Yes. Da Napoli runs a pizzeria and kitchen inside the distillery serving Neapolitan pizza and pasta. A table is booked separately, either before or after your experience.
Does the distillery host Christmas parties and functions?
The venue takes Christmas parties, cocktail parties, conferences and weddings. The Distillery Hall seats 70 or holds 120 standing on a minimum spend, and the whole venue can take up to 300 guests.
