About Pizza Coppola
Pizza Coppola is a family-owned mobile pizza business on the Sunshine Coast. The name comes from the coppola, the flat cap the founder's Sicilian father wore every day, and the truck carries a tiled wood-fired oven that turns out traditional Italian pizzas in front of your guests. The dough is made from Italian W325 flour, left to prove for 72 hours and stretched by hand, and the tomato sauce follows a family recipe. Menus mix entrée pizzas such as garlic prawn, classic and gourmet pizzas, and dessert pizzas like Nutella and strawberry, with vegan and gluten-free choices available. For parties, birthdays, work functions and Christmas events there are three set menus – Roma, Milano and Venezia – each covering roughly two hours of pizzas cooked to order. You choose the menu and the pizzas, then add extras: gelato made fresh the day before, cannoli filled on site, Italian cheese and cured meat grazing boards, fresh salads and wait staff. Wedding packages also include about two hours of pizza service plus wait staff, and can serve as the main meal or a late-night bite. Couples can add grazing tables, canapé-style entrées, salads, desserts and cakeage, and RSA serving staff can be arranged for a dry-hire bar where you supply the drinks.
