Choosing a Tasting Experience

A half-day gin workshop, a whisky tasting and a cocktail class are the three hosted experiences at South Coast Distillery on Drummond Street. Barrels and stills share the room with the cellar door bar at this Mount Saint Thomas craft distillery, which uses Illawarra and coastal ingredients in its gin, vodka, liqueurs and whisky.

Inside the gin-making workshop:

  • Tour: the session opens with a look around the distillery
  • Tasting: the house gins are poured before any recipe work starts
  • Botanicals: a stroll through the small garden out the back to learn which native plants are edible
  • Recipe: you work with a distiller on your own blend, then it is run through a glass still
  • Souvenir: a labelled 700mL bottle goes home with every guest

Allow about four hours for the workshop, with lunch and gin and tonics served along the way. Experiences start From $99 per person, and most public dates are on Saturday afternoons.
