Getting Cooking Classes Right

Campania-born Anna Rosa was cooking Italian food by the age of nine, and today she teaches it from home – 36 Ambrose Treacy Dr in Bundoora. Classes at Rosa's Traditional Italian Cooking happen around long steel benches, with lots of talk, a few stories from her Italian childhood and plenty of flour flying.

The class format, step by step:

  • Numbers – at least 6 and no more than 12, so Anna Rosa can help every cook.
  • Your hands, your dough – nobody sits back and watches; each guest rolls, cuts and shapes.
  • Savoury dishes – think fresh pappardelle under a slow ragù, arancini, meatballs over homemade fettuccine, ravioli stuffed with ricotta and spinach, or a Bolognese lasagne.
  • Desserts – whole sessions are given over to cannoli, ricotta crostata and amaretti.
  • Dinner – the cooks sit down together over a glass of wine or a soft drink, and some of the handmade dishes go home with them.

Prices start From $195 per person. Because the menu rotates monthly, a group can watch the calendar for the dish it wants, or ask for one when arranging a private class.
