Clear allBrunswick Kitchen is a small cooking school at 1/288 Albert Street, run by chef Tracey Lister. She spent years cooking and teaching in Hanoi and has co-written several Vietnamese cookbooks, so her own classes lean on dishes from Hanoi and central Vietnam, cooked and shared around a long communal table.
What a private group gets at Albert Street:
The format is mostly demonstration, with everyone asked to lend a hand as the dishes come together.

Owner Tracey Lister, a classically trained chef who worked in Melbourne restaurants, then helped set up a hospitality training charity in Hanoi and opened a cooking centre there. Guest chefs teach Italian, Colombian and other classes.
Ten guests. Teams work in pairs or small groups to produce a shared meal, and bigger groups can be hosted at other venues for an extra cost.
Mostly it's a demonstration, but you'll be asked to pitch in along the way. Everything that's made is served to the group with a glass of wine.
Yes. The Albert Street kitchen is available by the half or whole day for launches, workshops, photo shoots or private dinners. Private classes start from $145 per person.
