About Lord Byron Distillery
Lord Byron Distillery is a family-owned rum and gin maker on Banksia Drive in Byron Bay. Everything happens on site: the team ferments molasses from local cane growers with spring water from the family's farm in the Byron hinterland, then distils, ages and bottles it under the same roof. The distillery runs on renewable energy, aims for zero waste and lists the ingredients on every label. There are three ways for a group to get hands-on. The distillery tour starts with a tasting flight of three small pours chosen from the cellar door range, then a guide walks you past the stills and explains how each drink is produced. The cocktail masterclass has every guest building two cocktails, which they then drink. For something to take away, the gin class has the distillers guide you through making your own bottle of gin from start to finish. For celebrations, the tiki rum bar and the distillery floor can host an event, with the bartenders mixing drinks from the house spirits. A private tour and guided rum tasting can be added, and American-style smokehouse BBQ is on offer for catering. The site names birthdays, gatherings before or after a wedding, and corporate events. The cellar door also welcomes walk-ins and table bookings, and there is a cask program for anyone who wants to fill and age a barrel of their own rum. Send an enquiry to book a group tour, class or event.

What happens on the distillery tour?
You pick any three products from the cellar door range for a tasting flight of three 15ml pours, then a guide takes you around the distillery to show how the spirits are made on site from local ingredients.
How does the cocktail masterclass work?
A bartender walks the group through making two cocktails per person using Lord Byron spirits. Each guest makes their own drinks and gets to enjoy them at the bar.
Can we make our own gin?
Yes. In the gin class the distilling team guides you through every step of making a premium gin, and the bottle you create is yours to take home.
Can the distillery host a birthday or corporate event?
Yes. The tiki rum bar and working distillery can be booked for celebrations, including birthdays, pre or post wedding gatherings and corporate events. A behind-the-scenes tour, a guided rum tasting and smokehouse BBQ can be added. Send an enquiry with your date and numbers.
When is the cellar door open?
The cellar door on Banksia Drive opens Tuesday to Saturday from 10am to 5pm. Walk-ins are welcome, though tours and classes are booked for a set time. Alcohol is served only to guests aged 18 and over.
