About Aurum Cellar Door
Aurum Cellar Door sits on the covered verandah of the old Newrybar Hall in the Byron hinterland, where French-born winemaker Louis Costa pours a range of wines fermented from Australian honey. They are made fully dry, in the style of a crisp white, a rosé or a light red, which tends to surprise first-time tasters. Tastings are held on Saturdays from 10am to 4pm, and visitors choose how deep to go. A quick taste of two wines takes a few minutes, while the full flight covers the whole list – usually two sparklings, several still wines and either a dessert wine or the alcohol-free Manuka Spritz. For a longer sit-down visit, add a plate of six gluten-free canapés matched to the wines and allow an hour or two for questions with the winemaker. Bottles and Manuka honey are on sale to take home. For groups, Aurum takes private function enquiries and has worked with corporate groups and event planners. The team also offers a sommelier service, plus wine matching and sourcing for dinners and events. Dogs on a lead are welcome on the deck, there is a ramp up to the seating area, and guests with dietary needs should pass on details at least three days before the booking. Send an enquiry to book a group tasting or private event.

Frequently asked questions
How much does a tasting cost?
A taste of two wines starts at $5 and the full range is $15. The matched plate of six canapés is an extra $35 and entirely optional, so you can taste the wines on their own.
How long should we allow for the visit?
A simple tasting can take anywhere from five to 30 minutes. For the full sit-down experience with canapés and a chat with the winemaker, allow one to two hours. Guests are welcome to stay on for a glass afterwards.
Can Aurum host a private function or corporate group?
Yes. Aurum takes private function bookings and has worked with corporate groups and event planners, and it offers a sommelier service and wine matching for events and dinners. Send an enquiry with your group's details.
Are the wines sweet, and is there a non-alcoholic option?
No – the wines are fermented to dryness, closer to a fine white, rosé or brut sparkling than a traditional mead. Most sit around 10.5 to 11 per cent alcohol, and the non-alcoholic Manuka Spritz is usually on the tasting list.
Can the canapés suit dietary requirements?
Every canapé is gluten free but may contain fish, meat, dairy, eggs or nuts, and the selection changes weekly so it can't be altered much. Pass on any special dietary needs at least three days before your visit.
