About Applemire Cakery
Applemire Cakery is the cake business of Katie Ingmire, a qualified chef who went back to study patisserie. Working by appointment from the Southern Highlands, she makes bespoke wedding cakes, birthday and special-event cakes, and other sweet treats such as cupcakes and decorated biscuits. Every cake is covered in ganache rather than buttercream, which sets firm at room temperature and gives tiered cakes a steadier base. Finishes include semi-naked, smooth or textured coverage, stencilling, palette-knife detail and fondant decoration. Pricing is set per finger portion, and Katie suggests tier sizes to suit your guest count and preferred shape. As a guide, a single 6-inch round gives about 20 coffee portions, while a three-tier cake of 10, 8 and 6 inches feeds around 120. Flavours run from chocolate, caramel and banana mud to red velvet, carrot, sticky date, orange poppyseed and rainbow swirl, with premium fillings such as lemon curd and salted caramel. Mud cakes can be made gluten free, and recipes without common allergens are possible in a kitchen that also handles them. Send an enquiry to start your design.

Frequently asked questions
How is an Applemire Cakery cake priced?
Prices are a guide based on finger portions: semi-naked designs from $7 per portion, full ganache coverage from $8, stencilled finishes from $8.50 and fondant decoration from $10. Premium fillings cost extra, and a quote confirms the final figure.
Why does Applemire Cakery use ganache instead of buttercream?
Ganache sets firm at room temperature, giving tiered cakes a sturdier base and a sharper finish. Most decorating techniques, from semi-naked to textured and stencilled looks, can still be achieved with it.
How big a cake do we need?
A 6-inch round gives about 20 coffee portions or 10 dessert portions, and a 14-inch round about 100 coffee portions. Square cakes give roughly half as much again, and heights and widths can be adjusted to the look you want.
Are gluten-free cakes available?
Yes. All the mud cake flavours can be made with gluten-free flour, and the orange and almond and flourless chocolate cakes are gluten free by recipe. The kitchen does handle gluten, dairy, nuts and eggs, so ask about your specific needs.
Does Applemire Cakery make cakes for birthdays as well as weddings?
Yes. Alongside wedding cakes, Katie makes birthday and special-event cakes, and the gallery includes themed kids' cakes, milestone birthday cakes, cupcakes and decorated biscuits.
