About Paella Show
Paella Show is a family-run Spanish catering business based in Wahroonga, on Sydney's upper North Shore. Founder and head chef Jon Ingunza grew up in the Basque Country and worked in restaurants in Spain, London and Sydney, including Movida Sydney and the former Velero in Woolloomooloo. His chefs all trained in Spain, and the whole point of the service is the show: a huge paella pan set up at your venue, with the rice cooked in front of your guests. The menu centres on four paellas. There is a seafood version with mussels, prawns and squid, a surf and turf mix with chicken and chorizo, a meat paella, and a vegetable paella that also suits vegans. Everything is built on a sofrito base and a house stock, and the business says every ingredient it uses is gluten-free. Tapas can be served first as finger food, and there are desserts for adults and kids. Menus and quotes are put together for each event, based on guest numbers, location and the dishes you choose. Private Spanish cooking classes are also available. The team arrives about two hours before serving and needs a flat, covered patch of roughly two by three metres. They bring their own gas and eco-friendly plates and cutlery, so it works in a backyard, a park or an office with no power. Indoors is fine if there is enough ventilation. The paella is served buffet style, with a chef plating each serve from the pan, and the team cleans up its area afterwards. It suits birthdays, weddings, bucks and hens days, reunions and end-of-year work parties for around 18 to 200 guests.

Frequently asked questions
How far ahead should I book Paella Show?
They ask for at least four weeks' notice. Shorter notice can sometimes work, depending on what else is in their calendar.
What do they need at the venue?
A flat area of about two by three metres, ideally covered and sheltered from wind, rain and sun. They bring their own gas, so no power is needed. They can cook indoors if the space has good ventilation.
Is staff included in the quote?
Yes. The quote covers all the staff needed to prepare, cook and serve the meal buffet style. How many staff come depends on guest numbers and the menu, and you can ask for extra staff.
Can they cater for vegans and people who avoid gluten?
Yes. There is a vegetarian paella that is also vegan, and the business says all of its ingredients are gluten-free. Let them know about any other allergies when you book.
Do they travel outside Sydney?
They cater across greater Sydney and on the Central Coast. Events more than 10 km from their Wahroonga base may have a travel surcharge, which is confirmed when you book.
